BLACKBERRY GOAT CHEESE CROSTINI

These easy blackberry goat cheese crostini are perfect for summer entertaining! They have a simple whipped goat cheese spread mixed with honey, topped with fresh summer blackberries and fresh thyme. They are sure to be a hit!

Since they can be put together in 10 minutes, they are perfect for planned and impromptu gatherings.

All you have to do is, prep the ingredients ahead of time and when you’re ready to serve it, toast the bread and pile on all the deliciousness.

They are a sure crowd pleaser and will make you look like a superstar hostess without breaking a sweat.

These would be great paired with a nice crisp, white wine or prosecco. After all It’s 5 o’ clock somewhere, right?

Note:

You could also serve this dip-style, especially if you’re feeding a big crowd and don’t want to assemble all the individual crostini – just layer the crostini toppings in a shallow bowl and serve some toasted baguette slices on the side for dipping.

Ingredients

Scale
  • 1 baguette, sliced
  • 4 ounces of honey goat cheese
  • 3/4 tablespoon honey
  • 2  6-ounce packages of fresh blackberries
  • 6 sprigs of fresh thyme

Instructions

  1. Slice baguette into ½’ slices.
  2. Empty goat cheese into mixing bowl and mix with 3/4 tablespoon of honey.
  3. Spread cheese and honey mix over each baguette slice.
  4. Chop thyme into small pieces and sprinkle over crostini.
  5. Top each crostini with a blackberry and serve.

Notes
