Sweet Georgia Peach Cocktail

Ingredients

Scale
  • 2 oz. Peach Puree (about ½ fresh peach)
  • 3 oz. Ginger beer
  • 1 ½ oz. Rum
  • ½ oz. Lime Juice
  • ½ oz. Cinnamon simple syrup
  • Ice for serving
  • Lime, peach, and flower for garnish

Instructions

  1. Start a medium saucepan of water to boil. Once boiling, place the peaches into the boiling water for 45 seconds. Remove the peaches with a slotted spoon and place them in a large bowl of ice water. After about a minute or so when the peaches are cool enough to handle, use a paring knife to make a small cut to puncture the skin. Then use your fingers to pull off the skin in sheets.
  2. Slice each peach in half and use your fingers to pull out the pits. 
  3. Puree the peaches in a food processor or blender until a smooth puree forms. 
  4. Measure out the peach puree, ginger beer, vodka, lime juice and cinnamon simple syrup and pour into a glass.
  5.  Use a spoon to stir up the ingredients.
  6.  Top with ice and garnish with a peach slice, lime slice and flower. Enjoy immediately.
