- 2 oz. Peach Puree (about ½ fresh peach)
- 3 oz. Ginger beer
- 1 ½ oz. Rum
- ½ oz. Lime Juice
- ½ oz. Cinnamon simple syrup
- Ice for serving
- Lime, peach, and flower for garnish
Instructions
- Start a medium saucepan of water to boil. Once boiling, place the peaches into the boiling water for 45 seconds. Remove the peaches with a slotted spoon and place them in a large bowl of ice water. After about a minute or so when the peaches are cool enough to handle, use a paring knife to make a small cut to puncture the skin. Then use your fingers to pull off the skin in sheets.
- Slice each peach in half and use your fingers to pull out the pits.
- Puree the peaches in a food processor or blender until a smooth puree forms.
- Measure out the peach puree, ginger beer, vodka, lime juice and cinnamon simple syrup and pour into a glass.
- Use a spoon to stir up the ingredients.
- Top with ice and garnish with a peach slice, lime slice and flower. Enjoy immediately.
