Sri-Lankan Spiced Chickpeas

A snack that’s quick, easy, delicious, AND healthy. What could be better?!

Chickpeas or kadalaas we call it in Sinhalese, is a very common dish in Sri-Lanka. I love to have it as a snack, but it would also be great as a salad topper, side dish with some rice or in a buddha bowl.

They are a great healthy snack option and exceptionally tasty all spiced up. They are naturally gluten-free and a good source of fiber and protein.

All you need is a can of chickpeas (garbanzo beans), a large onion, fresh coconut and some spices.

Description

This healthy chickpea recipes is extra flavorful thanks to a wonderful blend of spices, coconut and onion.


Ingredients

Scale
  • 2 (16 ounce) cans of chickpeas, drained
  • ½ of a large onion chopped
  • 1 tablespoons mustard seeds
  • 3 dried red chilies chopped into large chunks (about ½ inch pieces)
  • 1 sprig (about 810) of curry leaves torn (optional)
  • ¼ cup fresh coconut, sliced (I use this kind HERE)
  • 2 tablespoons canola oil
  • ¼ tablespoon salt

Instructions

  1. Add 2 tablespoons canola oil to a large skillet on high heat.
  2. Once oil is hot add mustard seeds, chilies and curry leaves. Cook on high heat about 30 seconds until you hear seeds pop.
  3. Add the onions and cook until soft and golden, about 4 minutes.
  4. Add chickpeas, ¼ cup sliced coconut, ¼ tablespoon salt and cook for and additional 5 minutes stirring frequently.
  5. Serve warm.
